The "John" was made for Matsumoto's good friend John, who requested a bone dry sparkling sake. Unlike other sparkling sake, "John" is a serious champagne style sake, with 6 bars of pressure just like its french counterpart with 15% alcohol. With its delicate bubbles and beautiful flavours, it won the 2018 IWC Award for sparkling sake. Notes of lime and ripe melon compliment its beautiful finish of pink grapefruits, and its complex and citrusy notes making this a sake that is suitable for an aperitif or for a meal!
Muneki Matsumoto is the sixth generation owner of the family-run Tosa Brewery. Established in 1877, it still uses its original brewery. Situated in the mountainous region of Tosa Ryohoku, the brewery is a beautiful homage to sake traditions with modern twists. Due to their pre-dating of sake rice, they use organically-grown local rice to make their sake, standing out from other breweries who use traditional rice varieties, giving their sake's a distinctive taste.
