1. Saba / Mackerel
One of the most popular fish in Japan, this oily fish is a nutritional ingredient that can be grilled, curried, braised, and served in a lot of preparations
2. Ankou / Monkfish
Delicious and possible to prepare in a variety of ways, this fish also boasts a delectable liver also known as the foie gras of the sea.
3. Hirame / Flatfish or Flounder
Lovely as sashimi or even marinated with konbu (seaweed). We recommend trying the engawa or border between the fillets of the fish too.
